I avoid carbs because with an autoimmune disease, a carnivore diet is recommended by some, and a keto diet with no night shades or dairy is also considered a good idea. But--I now eat some dairy. My issue with carbs is I can do as you did, eat a certain number of calories, but I get "carb creep." One day I have a half cup of rice, the next 2/3rds of a cup, then a week later a cup of rice with dinner every night. Some of us--how many remains unknown--are very carb sensitive. For whatever reason, I've never before as an adult been under 110 pounds until I went on a carnivore diet. I'll see what happens when I add in dairy. Maybe it's all about staying below 1300 calories a day? As for Dr. Ludwig, I too hope people read his work and didn't intend to misrepresent him.
