I had fairly severe Hashimoto's then hit menopause and due to not sleeping, I began a journey to fix it. Cut to the chase--I eat a carnivore diet. This may sound wacky, but if you want an elimination diet that is nutritious and easy to digest, this way works. Resources include Paleomedicina, Dr. Shawn Baker, Dr. Ken Berry...and many others. One podcast I liked was Mikala (sp?) Peterson (no, I am not a fan of her dad, Jordan) who suffered from severe autoimmune diseases from birth. She is "cured" on an all meat (all beef) diet. Please consider this approach--it will save you a lot of time and suffering. There is a good FB group, World Carnivore Tribe, to help with details. I also went from 140 most of my adult life to under 110 after four months. I now modify the diet to "ketovore" with butter, sour cream, heavy cream and occasional fish and chicken--but the original diet was ruminant animals, water, salt. My labs went from TSH of 11 to 5, my symptoms cleared up, my sleep is vastly improved, and my mental health is normal (for the first time in my life since age 11). Please research carnivore!
