I’m told by the doctor who supervises this program that (1) BMs are much rarer (like once a week); (2) most of the nutrients in meat and fat are absorbed, so there is little to come out anyway, (3) it takes some time for the gut to adjust, hence 2–4 weeks (sometimes more) of diarrhea. My experience has been (1) is accurate. Not sure about 2, but it makes sense. As for (3) — I still have some loose stools when I go and I had diarrhea for the first month. Lately, it’s been about once a week. I wouldn’t call that regular but on the other hand when I ate lots of fiber it was every 2–4 days! I believe my gut is still adjusting. I would highly, highly recommend looking into Paleomedicina if you are celiac. Even if you don’t want to follow their PKD diet, they have a lot of interesting research on their website.
